Jimmy Shaw, our founder and Executive Chef, grew up in Mexico City, where his mother’s love for cooking inspired a lifelong passion. After moving to the U.S. for university, Jimmy worked in restaurants and as a personal chef, all while returning home to Mexico to collect recipes, techniques, and ingredients. In 2002, he opened the first Lotería Grill to share the soulful dishes he grew up enjoying, creating a menu that brings the heart of Mexican cuisine to Los Angeles.

Saúl Cruz Nasario, our Jefe de Cocina, grew up in the highlands of Puebla and has been cooking all his life. With a deep understanding of Mexico’s traditional techniques and ingredients, Saúl has been a cornerstone of Lotería Grill since day one. His creativity, warm humor, and unparalleled sazón have helped shape our menu into the rich, authentic experience it is today. Together with Jimmy, he’s been crafting unforgettable dishes for over 20 years.

Our slowly prepared guisos and specialties are made with the finest and freshest ingredients and prepared using the same processes as those used in Mexico. Our selection of top-quality chiles and spices, and our intimate knowledge of Mexican cooking techniques give a delightful richness.
